What Colors Are You Eating?

For a while, green was all the rage…green tea, dark green vegetables and green lentils.  Now a new color is proving to be more of the antioxidant power house!  Welcome BLACK!  According to Cy Lee, PhD, a professor of food chemistry at Cornell University in Ithaca, New York “black foods have more antioxidants than light colored foods because of their high pigment content”.  I am not suggesting that you leave our green friends behind, just hoping that you add some of our new found friends in.

  • Try black rice instead of brown or white. It has more vitamin E which helps boost your immune system.
  • Try black lentils or mix it with the traditional green to add color.
  • What berries should you eat? Eat more blackberries, it’s good for the brain!
  • Throw some black beans in your salad.

Remember to eat all the beautiful colors of the rainbow! Variety keeps life interesting.
