Lest it be said that I instil hesitation and fear about what you are eating and, more importantly, what you are feeding your children; please allow me to give you some easy solutions. Today’s blog is for my very good friend who reads my blogs diligently and who has used this program to change his life and affect positively his family. So you thought up until now the most convenient, the easiest and actually, maybe even the healthiest option for your child’s lunch is a sliced turkey sandwich from the deli counter. Many of you wonder what to feed your child for lunch, believe me I lived through it, I know. Instead of buying deli meat, may I suggest you buy a whole turkey breast. Let me provide you with a recipe that will be finger lickin’ good. By the way, not only will your children rave about this delectable sandwich, but you my friend will save a ton of money this way.
Save a ton of money? I really had no idea what deli meats cost! I guarantee that if you give up the deli meats for a little while and buy the turkey breast you will simply be amazed at what you can save at the grocery store. I suggest you buy the turkey breast on the weekend and make this recipe on either Saturday or Sunday. It is fast, easy and you will have lunch for the whole week.
Roast Turkey Breast
- 1 large boneless turkey breast (all natural, nothing artificial, no preservatives)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon Emeril’s Original seasoning
- 1 teaspoon oregano (optional)
- Salt and fresh ground pepper to taste
- Preheat oven to 425 degrees.
- Place turkey breast in shallow baking dish.
- Rub the turkey breast with extra virgin olive oil. Sprinkle with seasonings.
- Place turkey in oven and roast approximately one hour or please check the instructions, cooking time depends on the weight of the turkey breast. Please do not pay attention to the directions if they suggest the turkey breast should be cooked at 350 or 375, you are not baking a cake folks. Remember, when you want to roast meat and keep it tender and juicy, cook it at 425. Just trust me.
- When you remove it from the oven let it sit for 15 minutes prior to cutting.
- Slice the meat as thin or as thick as you like.
Please do not purchase a Butterball turkey breast, I am not certain they are all natural. Also remember that you can change the seasonings depending on what you and your family like. The most important thing to remember is that the roasting temperature must be 425 degrees and whatever seasonings you are using, make sure you are generous with them; except the salt of course. Well I guess you saw that coming.
